BRENSO

BRENSO was founded in Zurich as a temporary restaurant and zero-waste food project. It explored sustainability across the entire gastronomic experience: sourcing, kitchen organisation, labour, hospitality and relationships around the table. Root-to-leaf and nose-to-tail cooking, fermentation, pickling and preservation became tools for culinary complexity rather than decorative gestures. The Zurich restaurant is no longer operating. BRENSO remains an original concept that can return as a residency, collaborative dinner series, temporary restaurant or cultural programme.
